How Caviar is Harvested?
The process of harvesting caviar is meticulous and requires an exceptional degree of patience and expertise. Sturgeons, the source of this prized delicacy, take significant time to reach maturity. For many sturgeon species, the first harvestable caviar does not appear until they are around 12-14 years old. However, in the case of the Beluga sturgeon, known for producing the world-renowned beluga caviar, it can take up to 20 years before the fish produces its first and only harvestable caviar.
The ideal time for caviar harvesting occurs during a brief window of 3-4 weeks in summer ( in winter about 4-5 weeks depending on water temperature) when the eggs reach peak ripeness. If the timing is missed, no caviar is harvested, and the sturgeon will continue developing eggs for another two years until it is ready again. Remarkably, this additional time can result in a higher-grade caviar, like the exceptional roe we use in our Gold Reserve Caviar collection.
