Why buy here
Four reasons to buy caviar from me.
One farm, no middlemen.
I decide when a sturgeon is ready, I wash and salt the roe, and I fill every tin myself. Nothing stands between the water and your tin.
Filled the week you order.
We produce several times a week, in the quantity that is ordered. Your tin is the first one anyone opens – no repacking, no time on a shelf.
Unpasteurised, nothing added.
Roe and salt, nothing else. The caviar needs 24 hours to take the salt and turn creamy – that is exactly when it ships.
Chilled to your door in 24–48 hours.
Orders placed before 11 AM leave the same day, temperature-controlled and insulated, anywhere in the EU.
About the caviar
Alpine caviar from Salzburg – order online, on your table within 48 hours.
Our sturgeon grow in alpine spring water, on a farm that has been running since 1994. Four varieties come out of it: the mild, nutty Imperial Baerii from Siberian sturgeon, the deeper, more mineral Osietra from Russian sturgeon, the pearl-white Albino caviar produced in quantities so small that every tin is allocated individually, and Red Pearl, the roe of alpine salmon trout.
I do not age my caviar. It is filled unpasteurised, with salt and nothing else, and delivered within days. The best-before date is short on purpose: it tells you how the caviar was made, not what was done to it to make it keep.
For yachts, restaurants and larger quantities, write to me directly – pricing for bulk orders is individual.

Questions before you buy
Unopened at −2 to +4 °C, several weeks from the filling date printed on every tin. Once opened, eat within 2–3 days. Unpasteurised caviar keeps for less time than supermarket caviar because nothing has been done to it to make it last.
Across the EU, chilled, in 24–48 hours. Orders before 11 AM leave the farm the same working day.
Yes. Give me the delivery date when you order and the tin is filled for that day – not from stock.
