About Eichinger Caviar
One farm. One pair of hands.
Eichinger Caviar is one person and one farm. The sturgeon grow in alpine spring water in the Salzburg Alps, on a farm that has been running since 1994. I decide when a fish is ready, wash and salt the roe, and fill and close every tin myself. Nothing stands between the water and your tin.
We produce several times a week, in the quantity that is ordered – so the tin you get was filled in the week you ordered it, unpasteurised, with salt and nothing else. It goes out chilled and insulated and is with you anywhere in the EU within 24–48 hours. The short best-before date is the point: it tells you how the caviar was made.

Start with Imperial Baerii, from €54 for 30 g – mild, buttery, medium grain. If you already know you like caviar and want more mineral character, take Osietra. Albino is the rare one.
