Our caviar comes from sustainable Austrian aquaculture: the sturgeons grow in pure Alpine water, and the caviar is produced fresh in Salzburg in strict accordance with Austrian food regulations — deliberately unpasteurized. A world first is our Golden Reserve caviar, where you choose your own salting level or provide a fully custom salt recipe.
We offer Imperial Baerii, Osietra, the rare Royal Albino and Red Pearl trout caviar. In addition, there are our individually graded Platinum Selection and Titan Selection as well as the personalized Golden Reserve. Each type has its own distinct flavor profile and texture.
From Austria. Our sturgeons are raised in Austrian Alpine water, and the caviar is produced fresh every week in Salzburg. Production follows strict Austrian food standards and is CITES-certified for legal trade and species protection.
No. We deliberately do not pasteurize our caviar, so its natural texture and taste remain unaltered. You receive fresh, unpasteurized caviar — one of the reasons for its clean, precise flavor.
Unopened and continuously refrigerated, our caviar keeps for up to 8 weeks (Red Pearl trout caviar up to 6 months). Because it is unpasteurized, an opened tin is best enjoyed on the same day — within 1–2 days at most.
Store caviar at 2–4 °C in the coldest part of your fridge. Do not freeze it, and do not let it warm up to room temperature — take it out only shortly before serving.
Chilled at 6–8 °C, ideally with a mother-of-pearl spoon — metal spoons can alter the taste. Enjoy it pure or on a neutral base such as blinis or good bread.
By express delivery with the cold chain fully maintained: your caviar travels in insulated boxes with cooling elements and is typically delivered within 24–48 hours across the EU.

The Golden Reserve is our personalized caviar experience — the first of its kind worldwide: you choose your preferred salting level or provide your own salt recipe, and we produce your caviar fresh to order.

Good caviar tastes clean and never intensely fishy: mildly nutty, creamy, with a fine, fresh sea note. Each variety has its own character — from the balanced Imperial Baerii to the deep, complex Titan Selection. Browse all varieties in our caviar collection.
As a rule of thumb: 15–30 g per person for a tasting or appetizer, around 50 g for a generous serving where caviar is the star. For larger dinners or events, our caviar collection offers a range of tin sizes — and for special occasions we are happy to advise you personally.
Osietra comes from the Russian sturgeon and is prized for its pronounced nuttiness and golden-brown shimmer. Imperial Baerii comes from the Siberian sturgeon and is creamier, milder and particularly balanced — the modern classic among premium caviars. Albino sturgeons are an extremely rare natural occurrence, which makes their ivory-golden roe one of the rarest delicacies in the world. Our Royal Albino Caviar is therefore only available in very limited quantities.
Sturgeons need many years of careful raising before they mature — and quality caviar cannot be rushed. Our selections are also graded by hand: only about 10 % of the annual harvest qualifies as Platinum Selection, and just 5 % as Titan Selection. Add fresh weekly production and an unbroken cold chain, and every tin represents years of work.
Caviar is naturally rich in high-quality protein, omega-3 fatty acids, vitamin B12 and minerals such as selenium and iron. Enjoyed in typical serving sizes, it is a nutrient-dense delicacy — best appreciated fresh and unpasteurized, like our Austrian caviar.
Look for firm, intact pearls with a clean pop, a fresh scent without any sharp fishy smell, and a clear, traceable origin with CITES certification. Independent recognition helps too: our caviar is award-winning and was evaluated by a panel of culinary experts.

We advise against it. Freezing destroys the delicate structure of the pearls — texture and taste suffer noticeably. Store caviar refrigerated at 2–4 °C instead and enjoy it fresh — that is exactly why we ship express with an unbroken cold chain. Tip: smaller tins from our caviar collection are better than freezing leftovers.
CITES is the Washington Convention on International Trade in Endangered Species. The certification guarantees that our caviar comes from legal, controlled aquaculture and actively contributes to protecting wild sturgeon populations. Every tin from our caviar collection is fully traceable.
