How Caviar Is Made: From Sturgeon to Spoon

Caviar is one of the most prestigious and sought-after delicacies in the world. But how is it actually made? The process is as intricate and refined as the product itself – demanding patience, expertise, and respect for the natural cycle of the sturgeon.
1. Selecting the Right Moment – The Ripeness Test
Caviar production begins with perfect timing. The sturgeon roe must reach the ideal maturity – a stage that can only be recognized by experienced specialists. The key indicator of quality is firmness: the firmer the roe, the better. To avoid unnecessary harvesting, this assessment is done before slaughter, ensuring only fully mature fish are selected. This step requires years of knowledge and precision.
2. Gentle Harvesting by Hand
Once the perfect moment is identified, the roe is harvested with the utmost care. Each fish is processed manually to ensure that the texture and integrity of the roe are preserved. This artisanal approach sets high-quality caviar apart from industrial alternatives.
3. Rinsing and Sieving
The freshly harvested roe is gently rinsed in cold water and sieved to separate it from membranes and tissue. The grains are never exposed to harsh pressure or heat, maintaining their delicate structure.
4. Light Salting – The Malossol Method
Next comes salting – a crucial step that not only enhances flavor but also preserves the caviar. We use the Malossolmethod, meaning “little salt” in Russian. This technique uses minimal salt to let the natural flavor of the roe shine through.
5. Grading and Selection
Each batch is carefully graded based on color, size, firmness, and taste. At our facility, only the best pearls are selected. Unique batches – such as our Albino Caviar, the rarest of them all – are produced exclusively to order and never mass-distributed.
6. Packaging in a Temperature-Controlled Environment
Caviar is filled into tins in a sterile, cold environment and vacuum-sealed. Our packaging ensures the product stays fresh and protected during express delivery. Thanks to our logistics, we guarantee delivery within 48 hours across the EU.
