The perfect accompaniment to caviar - Blinis

Ingredients (for 2 people):

  • 79 g buckwheat flour
  • 50 g wheat flour (plain)
  • 10 g butter
  • 2.5 g yeast (approx. 1/10 of a cube)
  • 1/8 l milk
  • 1 egg
  • 1 yolk
  • 1 egg white
  • Salt
  • Clarified butter or oil (for baking)
  • 50 g Imperial Baerii Caviar (or more if you like)
  • 200 ml sour cream
  • A few sprigs of dill (to taste)
  • Chives
  • 1-2 l crushed ice

Instructions:

  1. Mix both types of flour together. Let the butter melt gently and dissolve the yeast in lukewarm milk. Pour both into the flour mixture and stir until smooth. Then stir in the egg and yolk. Beat the egg white with a little salt until stiff and carefully fold it into the dough. Cover the dough and let it rest for 30 minutes.
  2. Heat the fat in a flat pan. Using a large tablespoon, add small amounts of batter to the pan to form small (5 cm) pancakes. Cook slowly until crispy (approx. 2 minutes), then flip them and repeat the same process for cooking the other side.
  3. Put the sour cream in a glass jar. Layer the ice cream in a large (silver?) bowl and place the caviar on top with the sour cream using a mother-of-pearl or horn spoon. Serve the warm blini with the blini and garnish with dill and chives.
  4. Heap a teaspoon of sour cream and a good amount of caviar on each blini, garnish with dill or chives if desired and enjoy with champagne and/or ice-cold vodka.


Tip:

You can also prepare the blini in advance and freeze them. To do this, place a piece of kitchen roll between each one to prevent them from getting soggy. Then bake them in the oven at 220 °C for 7 minutes to warm them up.
