Genuine caviar, especially the albino caviar or "white gold," comes from extremely rare albino sturgeons. These pigmentless sturgeons are found in only one out of 20,000 eggs, making their breeding incredibly complex. Annually, only about eight to twelve kilograms of white caviar are produced worldwide. The price ranges between 15,000 and 35,000 euros per kilogram, making it one of the most expensive foods in the world.
