About the Competition
What are the Black Pearl Awards?
The Black Pearl Awards held their first edition in Gstaad in 2026. Twenty-four caviar producers entered — from Austria, France, Italy, China and beyond. Each was tasted blind. No labels, no country of origin, no reputation to hide behind. Just the caviar.
The jury — ten Michelin-starred chefs and culinary authorities from across Europe — assessed each sample on taste, grain consistency, colour and finish. No producer sits on the jury. No sponsor influences the result. Eichinger Caviar entered two categories and placed in both.

Our Imperial Baerii is harvested, processed and shipped fresh — fully unpasteurised, with absolutely no preservatives or additives of any kind - only Salt! What the jury tasted was exactly what our customers receive: raw, pure caviar in its most honest form.

We don't stockpile. Every batch is processed and dispatched within days of harvest — week after week. The jury evaluated our caviar at its absolute peak, which is the exact same standard we maintain for every single customer order, every single week.

Eichinger Caviar is produced in Austria using pristine mountain spring water. The mineral profile of our water shapes the flavour of every pearl — clean, precise, and unmistakably alpine. A terroir you can taste, and a jury could recognise.
