The Platinum Selection is defined by its silver-grey pearls — large, lustrous, with a firm pop and a long, nutty finish. Not briny. Not heavy. Precisely what Austrian Alpine water and careful rearing produce when the conditions are right.

Not every harvest qualifies. Platinum is a grade, not a product. Each batch is assessed individually — for colour, size, texture and depth of flavour. Approximately 10 % of annual production meets the standard. Produced fresh every week in Salzburg, unpasteurised, available only when that week's harvest yields it.

What is Platinum Selection?

Platinum Selection is Eichinger's finest standard caviar — sourced from mature Siberian and Osietra sturgeon raised in Austrian Alpine water, then individually graded for colour, size and firmness. Only the top percentage of each harvest qualifies.

The result: a caviar of exceptional consistency, clarity of flavour and remarkable texture.

Taste

Clean and balanced, with a pronounced nuttiness and a long, creamy finish. Platinum offers a depth that reveals itself gradually — neither too briny nor too mild. The ideal caviar for those seeking a reference-quality experience without the inaccessibility of rarer varieties.

How to serve

Serve chilled at 2–4 °C. Allow the tin to rest briefly at room temperature before opening. Always use a mother-of-pearl spoon — metal distorts the delicate flavour. Pure on first tasting; blinis or crème fraîche may be introduced thereafter.

The Selection Grade

Platinum Selection is not a separate product — it is a grade. Each year, a tasting panel evaluates the full harvest at Grüll. Only tins that meet an exceptional threshold in pearl size, texture, colour consistency, and flavour depth carry the Platinum label.

Approximately 10 % of annual production qualifies. The rest is released as standard Baerii or Osietra. The tin in your hands did not happen by default.

Availability

Eichinger produces fresh caviar every week. In rare cases — very rare — a fish from that week's harvest carries caviar of Platinum grade. When it does, that batch is listed immediately in the quantities it yields. Nothing is held back. Nothing is replicated.

There is no schedule. No guaranteed next batch. If Platinum Selection is available now, it is because the right fish was harvested this week. That does not happen on demand.
